Så var julstöket igång igen. Tänkte dela med mig av mitt favoritrecept på en riktigt saftig och god saffranskaka som är en klassiker till adventsfikat. Det är duktiga Leila Lindholms egna kreation. Hoppas ni har en mysig december!

Saffranskaka med kokos

  • 3 ekologiska ägg
  • 2 1/2 dl strösocker
  • 1 tsk vaniljsocker
  • 50 g smör
  • 1 dl mjölk, 3 %
  • 1 påse (½ g) saffran
  • 1 msk ljus rom
  • 3 1/2 dl vetemjöl
  • 2 tsk bakpulver
  • 1 nypa salt
  • smör och kokosflingor till formen
  • florsocker till pudring av kakan

Gör så här:

  1. Sätt ugnen på 175 grader.
  2. Vispa ägg, strösocker och vaniljsocker vitt och riktigt pösigt.
  3. Smält smöret tillsammans med saffranet. Rör i mjölk och rom, blanda det med äggsmeten.
  4. Blanda mjöl, bakpulver och salt och vänd försiktigt ner det i smeten.
  5. Smörj och bröa en form med kokosflingor.
  6. Grädda kakan i mitten av ugnen 25–30 minuter. Prova med en sticka, den ska inte vara kladdig.
  7. Låt kakan svalna något och stjälp sedan upp den på en tallrik eller ett brödgaller. Pudra över florsocker vid servering.
